Fresh Spring Recipe: Creamy Lemon Asparagus & Herb Pasta
Nothing says spring in Maine quite like fresh asparagus, bright lemon, and simple comfort food after a long winter. This easy pasta dish is light, fresh, and perfect for everything from weeknight dinners to backyard gatherings as the weather finally starts warming up.
Ingredients
- 12 oz pasta (penne, bowties, or linguine work great)
- 1 bunch fresh asparagus, trimmed and cut into bite-sized pieces
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- ¾ cup grated Parmesan cheese
- Juice of 1 lemon
- Zest of 1 lemon
- 1 tbsp fresh parsley, chopped
- 1 tsp fresh chives, chopped
- Salt & black pepper to taste
Optional Additions
- Grilled chicken
- Maine shrimp or lobster
- Crushed red pepper flakes
Instructions
- Bring a large pot of salted water to a boil and cook pasta according to package directions.
- During the last 2–3 minutes of cooking, add the asparagus directly into the pasta water until bright green and tender-crisp. Drain and set aside.
- In a large skillet, melt butter over medium heat. Add garlic and cook for about 1 minute until fragrant.
- Stir in heavy cream, Parmesan cheese, lemon juice, and lemon zest. Simmer gently until the sauce begins to thicken.
- Add pasta and asparagus back into the skillet and toss until evenly coated.
- Finish with fresh parsley, chives, salt, and black pepper.
- Serve warm with extra Parmesan and fresh lemon wedges.
This dish pairs perfectly with a cool spring evening, open windows, and maybe even plans for a weekend at the lake.
